If that is going to be just one node, I would recommend going with ready
solution like Openfiler or Nexenta.

Pure CentOS 5 with iSCSI will do, too, but will be a bit more cumbersome to
configure (which itself is pretty cool experience;  you will learn about
iSCSI etc.).
