If you edit

/etc/sysconfig/network

and edit the HOSTNAME to be what you want the hostname to be.

That's what I always do.  but then, with SL6, I also edit /etc/hosts as 
well.
I haven't gone through RedHat's documentation on what the official way 
is nowdays.
