Wine is part of the EPEL repository, so you need to install the epel 
repository yum repository.  You can do this during the install or 
afterwards.  I usually do it afterwards

   yum install epel-release

You should then be able to install wine as you would install any other 
package.

I'm not sure what you mean by this.
If you install using the x86_64 install DVD's, you automatically have 
the x86_64 repositories installed.
