Hi Phil,
If you only want to use 1 DVD for the install, then you should use the 
Install DVD instead of the Everything DVD set.

What you suggested is exactly what we did for the install DVD.  Except 
instead of picking and choosing our own packages (which someone is sure 
to disagree with no matter what we choose) we simply chose those 
packages that RedHat chose.  So that if someone disagrees with our 
choice, they can talk with RedHat.
