You should be able to modify the gconf (assuming gnome is doing the
automatic mounting) property
/system/storage/default_options/iso9660/mount_options

Past that, it might be Hal that takes care of some of these things, and
you may need to dig around
/usr/share/hal/fdi/policy/10osvendor/20-storage-methods.fdi
