When you say you are rebuilding src rpm's, how are you doing it?

Are you unpacking them and then
   rpmbuild -ba <package>.spec
or are you really just rebuilding the src.rpm's
   rpmbuild --rebuild <package>.src.rpm

Because if you are just really rebuliding the src.rpm, then you don't 
have much choice about where it is putting things.
But, if you are changing the spec file, then we can help a bit more.
