That depends on if you are running the guest OS in paravirtualized mode, or
fully virtulized mode.
Paravirtulized mode, the guest OS has to have the kernel-xen kernel. The guest
then knows that it is virtulized and is able to do much more and is overall faster.
Fully virtulized mode, the guest OS doesn't know it is virtulized and can run
whatever kernel it wants. But if you do an install and tell it to do
virtulization, you then have a guest trying to be a host (domain 0), which is
probrubly not what you want.
