You have to add the "insecure" flag to the NFS server in order for the
Mac OS X NFS client to work.  Not that NFS is secure to begin with.........

Personally, I use the SMB protocol to mount drives from the Mac -
Option+K, "smb://myserver.fqdn.edu/share" -- and off you go!  Much
easier, and much more secure.
