Yes you can dual boot.
You really don't have to do any extra if you have a whole extra drive.
Just use that drive as your linux drive and it's a piece of cake.
As for windows eating your linux partition, I have never seen that. I've
got many machines dual booting, and most have both both OS's on the same
drive and never had a problem.
