read;

  man rpm
  man yum

  info rpm
  info yum

if you do not know what provided gnome-icon-themes, you can run

  rpm --whatprovides 'name.of.themes'

or

  yum provides 'name.of.themes'

to get package name.

running;

  yum reinstall 'icon.package.name'

should put you back.

i have never had to do such, but if my understanding is correct, above
will/should/may bring back your icons.
