That is because the binary /usr/sbin/ethereal and /usr/bin/ethereal is in 
the rpm ethereal-gnome

[root@yort RPMS]# yum provides bin/ethereal

ethereal-gnome.x86_64                    0.10.11-1.EL4.1        base-SL
Matched from:
/usr/sbin/ethereal
/usr/bin/ethereal

ethereal-gnome.x86_64                    0.10.12-1.EL4.1        installed
Matched from:
/usr/bin/ethereal
/usr/sbin/ethereal

Yum is your friend.
