After using Fedora 17 on one drive and Win7 on another drive and using
GRUB2 to set-up dual boot all I can say is wow to the simplicity of
it.

I would suggest purchasing a third smaller drive.

1TB - Win7
1TB - Centos/SL
500GB - Fedora 17

Install each OS with just the one drive in the system.

Then place all drives back into the machine and ensure it boots to F17.

Key steps are...

grub2-mkconfig -o /boot/grub2/grub.cfg
grep ^menuentry /boot/grub2/grub.cfg | cut -d "'" -f2
grub2-set-default <menu entry title>
